About the Author
Raymond A. Serway (PhD, Illinois Institute of Technology) is Professor Emeritus at James Madison University. His honors and awards include an honorary doctorate degree from his alma mater, Utica College, the 1990 Madison Scholar Award at James Madison University, the Distinguished Teaching Award at Clarkson University in 1977, and the Alumni Achievement Award from Utica College in 1985. As Guest Scientist at the IBM Research Laboratory in Zurich, Switzerland, he worked with K. Alex M�ller, 1987 Nobel Prize recipient. He was a visiting scientist at Argonne National Laboratory, where he collaborated with his mentor and friend, the late Sam Marshall. Dr. Serway is the coauthor of COLLEGE PHYSICS, Eleventh Edition; PHYSICS FOR SCIENTISTS AND ENGINEERS, Ninth Edition; PRINCIPLES OF PHYSICS, Fifth Edition; ESSENTIALS OF COLLEGE PHYSICS; MODERN PHYSICS, Third Edition; and the high school textbook PHYSICS, published by Holt McDougal. He has published more than 40 research papers in the field of condensed matter physics and has given more than 60 presentations at professional meetings.

Chris Vuille (PhD, University of Florida) is associate professor of physics at Embry-Riddle Aeronautical University, the world's premier institution for aviation higher education. While he has taught courses at all levels, including postgraduate, his primary interest is the teaching of introductory physics courses. He conducts research in general relativity, astrophysics, cosmology, and quantum theory and was a participant in a special three-year NASA grant program where he studied properties of neutron stars. His work has appeared in many scientific journals and in ANALOG SCIENCE FICTION/SCIENCE FACT magazine. He is the coauthor of COLLEGE PHYSICS, Eleventh Edition and ESSENTIALS OF COLLEGE PHYSICS.

This is a fabulous book. I use it with my clients and have of course done the work myself. I am so glad it has been reprinted. Thom Rutledge's book/workbook can be used alone or in conjunction with a therapy practice. Serious work with lots of good writing to "lighten it up."

A very helpful resource!

First off I want to say that anything Thom writes is worth it's weight in gold. I work in the area of eating disorders and recommend all of Thoms books to my clients. He knows what he is talking about. The name Thom Rutledge is synonymous with recovery from any addiction whether it be codependency, eating disorders, substance use etc. This handbook is so very helpful and allows the reader to work at their own pace. I hear from women all the time about how much they gained from not only reading this book but by working through it applying the tools to their lives. Thank you Thom!

skimpy on meat, long on filler

It's great finally to have a book in English dedicated to the subject of Italian cured meats, but - since it's the only book we're likely to have - it's disappointing that's it's not better.

In several respects, this book does improve on their Charcuterie book. First, they no longer recommend the grinder attachment for the Kitchen Aid mixer, since it can't handle partially frozen meat, the auger churns it too much, and its dull blades smear rather than shear the fat, all resulting in sausages with poor texture. If they'd `fessed up about this 7 years ago, they'd have saved aspiring sausage makers a lot of frustration.

Second, their salami recipes now say that the meat should sit for up to a day after salting and grinding, before finally mixing and stuffing . This extra step allows the salt to extract myosin (a protein in meat, like the gluten in wheat), which makes for a good "bind" in the final product.

But in other respects, this book reads like time has stood still or the authors have missed out on new developments.

For curing whole muscles, they continue to rely on the traditional "salt-box" method, where the meat is simply kept covered with salt, one day for each couple of pounds. The fact that they equate 2 pounds to 1 kilogram (when it's actually 0.9) tells you a lot about the imprecision of this method. A better method, which yields more consistent results and won't have you going through boxes of salt is equilibrium brining. Once you know how much salt is to your liking, you weigh the meat (plus whatever liquid you're adding), use your ratio to calculate the amount of salt needed (I like .25 oz or 7 g per pound), and then hold it in a vacuum or Ziploc bag until the salt has been absorbed and the brine and the meat reach "equilibrium," injecting larger muscles with the cure.

You'll also find no mention of sodium phosphates, even though they've long been available from their favorite supply house, Butcher-Packer. As other recent books, such as Modernist Cuisine, explain, sodium phosphates are a useful additive for dissolving myosin and accelerating the development of a cured flavor. Similarly, you'll find no mention of vacuum-sealing, sous vide, or even the use of a simple temperature controller to create a precisely calibrated water bath.

And if you found some of the recipes in Charcuterie to be unpalatably salty (and I have quite a salt tooth), be warned: the amount of salt called for in Salumi is even higher, as much as 50% higher (consistently 3% of the mix, including curing salt).

Most distressing is their continued reliance on a single strain of bacterial culture to ferment all their salami: Bactoferm F-RM-52 (the strain they recommend on page 65). As Butcher-Packer's website explains, F-RM-52 is "the culture recommended for the production of traditional North European types of fermented, dry sausages with a sourly [sic] flavor note." Even Ruhlman and Polcyn confess that the lactic acid produced by this culture results "in a tanginess that is slightly overbearing" (p. 68).

Of course it is! This strain is designed to produce the strong sourness characteristic of German fermented sausages and is simply unsuited to making salami. The Christian Hansen culture formulated for southern European types of salami is T-SP-X, and it has been available from Butcher-Packer for about 5 years now. Other recent books on fermented sausages, such as those by Stanley Marianski, recognize that this is the appropriate culture for Italian salami.

Similarly, the ingredients called for by the recipes are perplexing. Trapani sea salt is recommended, as "an Italian sea salt from Sicily used all over Italy," but then they freely acknowledge that other ingredients they use a lot in their recipes, such as paprika, are actually uncommon in Italy. For example, their recipe for nduja calls for La Vera piment�n from Spain. If they're calling it "Nduja di Calabria," shouldn't they use actual Calabrian chili peppers, which are now readily available in this country (from The Sausage Debauchery, for example, which is listed among their Resources)?

Aside from such lapses or oddities, the book is simply skimpy on meat and long on filler. Those hoping to make Italian salami will find less than 75 pages of recipes, and even these are padded. The steps in making a salame hardly change from recipe to recipe (a different diameter die for the grind, a different diameter casing for the stuffing), yet the authors write out all the steps in full each time, ensuring each recipe fills up 2 pages. And some recipes are basically repetitions. On page 139, they have a recipe for Salamini Cacciatore, calling for equal portions of pork shoulder and wild boar. On page 155, is a recipe for Salsicca di Cinghiale Crudo, which is identical in all its seasonings, just altering the ratio 3 to 1 in favor of the boar and calling for beef middles instead of hog casings. A two-sentence note to one recipe, suggesting this variation, would have sufficed.

And the final section of the book is dedicated to "cooking with and serving salumi," with recipes for crostini, roasted garlic, pesto, pizza, chicken stock... Seriously? It's hard for me to believe that anyone who's fanatic enough about Italian food to break down a pig and cure their own pancetta or guanciale could need a recipe for crostini or spaghetti carbonara. Their recipe for serving prosciutto or coppa with fruit says "We have no specific instructions here other than finding excellent ingredients. In terms of quantities, use common sense... Put all the ingredients out on a cutting board, or arrange the ingredients on small plates..." Such "recipes" simply don't deserve the 63 pages that they take up.

Since many readers give this book 4 and 5 stars, some may have found my review unduly harsh and "pedantic." I freely admit to being a hard grader. But other readers have pointed out even more serious errors than ones I noted.

Writing about guanciale (on p. 88), they say "You can use sodium nitrite here if you wish, for a more bacony, pancetta-like flavor, using 0.25% of the weight of the meat . . . about 1/4 ounce for 5 pounds, or 6 grams for 2 kilograms of meat." This error is repeated on p. 68, in their introduction to dry-curing, where they say, "We believe . . . 0.25% sodium nitrate relative to the weight of the meat to be ideal."

If you follow this advice and add 0.25% sodium nitrate or nitrite relative to the weight of the meat, you will be adding 16 TIMES MORE THAN THE USDA ALLOWS AND APPROACHING LEVELS THAT ARE TOXIC. (As the authors note on p 63, 7.1 grams is the toxicity level for a person weighing 220 pounds.) Anyone familiar with curing salts will understand that they are referring instead to pre-mixed cures, cure #2 (which contains 5.67% sodium nitrite and 3.63% sodium nitrate) and cure #1 (which contains 6.25% sodium nitrite or 1/16 exactly) respectively. But for a novice who takes them at their word and makes nitrates/nitrites 0.25% of the mix, this could be a fatal mistake.

It's one thing to pad the book out and fail to mention things that could make the salumi better. It's another thing entirely to be inaccurate in your terminology in a way that could lead someone to poison themselves.

Poorly Edited Recipes

When you are taking on the task of dry curing meats, you want to be sure you are safely doing so. While I loved "Charcuterie", and was very excited to get my hands on "Salumi", I was disappointed, like many others, with the obvious lack of detailed editing and recipe testing in Salumi. I won't point out again what others have already pointed out, but I will add that the very first recipe that I was planning to make was the "Speck" recipe in the book, and found a couple of errors. The recipe gives the weight of the meat to be cured at a "4500 gram Pork Shoulder", which gives us the starting point to the rest of the recipe (which is based on the weight of the meat.) He then gives the salt cure measurements, which consist of "225 grams of salt (8.5% of the weight of meat)"...the problem is that 225 grams is only 5% of the weight of the 4500 gram shoulder they are curing, not 8.5%. This calls into question the rest of the cure, including the pink salt and other ingredients (are they based on the weight of meat or the weight of salt?).

Also, in the same recipe, the description of the recipe states that "Ours is heavily seasoned with pepper, bay leaf, juniper, nutmeg and cinnamon."...yet there is no cinnamon in the recipe at all. This, again, was the first recipe I've tried in the book, and found 2 errors...I'm a bit hesitant to try others.

I emailed Michael Ruhlman on Nov. 11 to inform him about the errors I've found, but never did ger a reply.

I do hope that the second printing of this book fixes the errors that I have found, as well as the ones others have found, as I think this could have been a good book. I do not recommend buying it until then.

Not Impressed

I got and read it last week. Not awful but frankly I wasn't impressed overall. More of a recipe book plus discussion on quality of pork and butchering. I was hopeful there would be more information around "troubleshooting" issues such as case hardening as well as more in depth discussion on humidity, temp ranges. Said another way more "meat" around the actual curing process. Let's be honest, most of us can follow a recipe and have the equipment already - our struggles are with consistency and the actual end result for a variety of reasons. There is no discussion on the different fermentation cultures available and the resulting taste differences. They still recommend humidity of 60%-70% which based on my experience is way too low, especially initially.

All in all I would say this book would suit someone with a solid knowledge of curing already and then only as a reference for either butchering a hog or recipes, nothing more.

The perfect travel guides - Rough Guides

The Rough Guides speak my travel language. While waiting for their new guide to Morocco to be published I got a couple other travel guides to Morocco. They were good, but I was not really able to plan my trip until my Rough Guide arrived. Something about the writing, the priorities and the advice of the authors fit me just right. I always want to travel with Rough Guides as my source.

I am an adventurous traveler. Prefer the road less traveled, and like to find hidden treasures. I travel low budget, but I like that the Rough Guides offer different budget options, in case I'm ready for a more upscale experience along the way.

The Best in Young Adult Fiction

In the first book of the Westmark Trilogy, Theo asks, "Even if the cause (of war) is good, what does it do to the people who stand against it? And the people who follow it?" The answer to those questions is The Kestrel. Using a panorama of characters, Alexander shows war from all perspectives: from the leaders,' from the bystanders,' and from the soldiers.' Alexander draws on his own experiences of World War II to give the reader (of any age) insight into the moral complexities of war.
The main character is once again Theo. When Westmark is attacked by neighboring Regia, Theo is forced with a dilemma. Should he serve his love (Mickle) or should he serve his country? Eventually, Theo is compelled to join fighting along with Florian's forces because of a memory of his cowardice at the battle of Nierkeeping in "Westmark." Fighting a guerrilla-style war under the command of Justin, Theo begins to be baptised by fire. He sees comrade after comrade killed. He becomes filled with hatred for the enemy army. Eventually, he is given command and becomes Colonel Kestrel, a semblance of Theo who commits unspeakable acts in the name of war.
Alexander studies the morals of war through his characters. The reader is forced to examine psychological aspects of war in Theo. War is also shown through a leader's eyes with the examinations of Mickle, Theo, Justin, and Florian. The devastating effect of war on the countryside is shown from following Sparrow and Weasel.
The Kestrel is a brilliant continuation of the series. The plot is magnificent, and it has so much depth. The characterizations are excellent, and the issues studied are compelling. The Westmark Trilogy is a great piece of young adult literature. I've read some of the great war novels like All Quiet on the Western Front and The Red Badge of Courage, but the trilogy is better written and with more depth. Everyone really should read these excellent novels.

A trilogy by Lloyd Alexander, the grand master of fantasy!

The second book of the Westmark Trilogy, the adventures of Westmark continues in "The Kestrel". Theo is now traveling through Westmark to learn more about the country. He and Mickle, now known as Princess Augusta, are hoping to be married after he returns. But suddenly and without warning, Westmark is thrown into turmoil as the neighboring country of Regia has declared war on Westmark. Theo is once again forced into making a hard decision, will he stay in the sidelines or fight for his country? Eventually, he joins under the command of Florian and his people to fight a guerrilla war against the troops of Regia. As he sees brave and honorable men die one by one, Theo finds himself changing into a merciless commander and a stranger to himself...
For those familiar with Lloyd Alexander's award winning series, "The Prydain Chronicles", I can honestly and truly recommend this other series written by the 'grand master of fantasy'. A bit more serious with dark overtones, "The Westmark Trilogy" deals with realistic events that can almost convince you that the series is based on true historical events. Through the series you will be given a chance to explore the characters as they struggle with forces beyond their control. Lloyd Alexander gives a realistically accurate study of human nature and psychology of war. I must say, after reading this book, I was left in thoughtful silence, musing over what I had just finished reading. It is not very often we Young Adults are given books which leaves you in a state of contemplation
As I said, I can highly recommend the thrilling and psychologically filling "Westmark Trilogy". Best to read in order. But the faint-hearted be warned, this book and the next one in the series are somewhat violent and gritty since the main theme is about war. But nothing too bad to turn away lovers of a good series! Pick these series up!

The Best of an Excellent Series

While "Westmark" (the previous book) and "The Beggar Queen" (the final book in this trilogy) are excellent books, this is the best, because -- well, because it's the one that has the power to hurt the most as you see what characters you care for are forced into by circumstance, the twists of fate and their own sense of duty.
Former Chief Minister Cabbarus, forced into exile in "Westmark" plots with the uncle of the King of neighbouring Regia to invade Westmark and re-establish a "proper" society. Theo wanders the country, trying to get a grip on how he feels about the thought of Mickle, the street urchin he fell in love with in "Westmark" becoming Queen... with himself intended as Prince Consort.
When the invasion begins, Mickle finds herself forced to become a military commander, and Theo finds himself among Florian's "children" again, fighting the Regians as an irregular, eventually rising to the rank of colonel among Florian's forces.
And Alexamder takes the chance -- without seeming preachy or heavy-handed -- to present us with just a bit (PG13 rating or so) of the horror of war and what it does to even good people.
Because "Colonel Kestrel", the brilliant and ruthless revolutionary/guerrilla leader is, also, the gentle Theo, who has never believed in violence as a solution to anything.
Someone has said, more or less, that Alexander is here presenting a parable on the uses and effects of violence, in causes good and not-so-good. He proposes (by example) the question "When -- if ever -- is violence justified in a 'good cause'?", and proceeds to show us (again by example) the answers to that question arrived at by various people of greater or lesser good-will.
And then he hands the reader an even hotter potato to examine than that -- he asks us to consider the after-effects of violence (even "in a good cause") on the people who have found themselves forced into it.
And it hurts -- in a good way -- to see what some people must give up so that others may still have it.
(David Drake presents a much more violent -- and most *definitely* adult -- look at much the same questions in his military SF novel "Redliners".)
In the end, everyone is forced to compromise somewhat, and all *appears* to be well.
On the other hand, this *is* the second olume of a trilogy.

A very good, but not groundbreaking, online dating guide for men

This is overall a solid book that goes over the basics for online dating from the heterosexual male perspective. The book is an easy read and really goes through the process of building a good profile and messaging people step-by-step. Anybody who is new to online dating, especially straight men, can learn a lot from this book and I'd highly recommend it to those people.

However, I did knock a star off because most of the advice here will be familiar to anybody who is a frequent reader of O'Malley's online blog or other dating advice websites for men that touch online dating. If you are a harder case, who is doing all the basics right but still having little to no success, there's really not much in the way of dramatic or novel insights to help you here.

As usual, Dr. Nerdlove knows how to make things work. It covers every aspects about online dating, and to a certain extent, what to do after you don't need online dating, assuming you found someone online which is neat. For a typical reader, it's a simple, direct and effective read on how to crack online dating. But, there's a but here, if you don't want a minor spoiler, please skip the rest of this review, this book actually uses some of the Doctor's materials from his blog. By all means, I believe those materials are the hard work of the Doctor, including his personal struggle to go through the same issues, and I know they'd helped many individuals. But I can't help but feel the avid readers of his blog would not get enough bang for their buck (no pun intended) after reading this book because I'm sure they have read a few near identical articles on his blog before. And now they appear in this book almost identically, and to read his blog is completely free. I know the price of this book is not much, but I was also hoping the Doctor would inject some new ideas into the existing system to make this book truly awesome and refreshed, even rephrasing some of the ideas would help. Again, like I said, a typical reader will find this book useful, and that's the reason I gave it a five star. but for a fan of your blog, this is a four at best.
