The decade-long Great Depression, a period of shifts in the country’s political and social landscape, forever changed the way America eats. Before 1929, America’s relationship with food was defined by abundance. But the collapse of the economy, in both urban and rural America, left a quarter of all Americans out of work and undernourished—shattering long-held assumptions about the limitlessness of the national larder.

In 1933, as women struggled to feed their families, President Roosevelt reversed long-standing biases toward government-sponsored “food charity.” For the first time in American history, the federal government assumed, for a while, responsibility for feeding its citizens. The effects were widespread. Championed by Eleanor Roosevelt, “home economists” who had long fought to bring science into the kitchen rose to national stature.

Tapping into America’s long-standing ambivalence toward culinary enjoyment, they imposed their vision of a sturdy, utilitarian cuisine on the American dinner table. Through the Bureau of Home Economics, these women led a sweeping campaign to instill dietary recommendations, the forerunners of today’s Dietary Guidelines for Americans.

At the same time, rising food conglomerates introduced packaged and processed foods that gave rise to a new American cuisine based on speed and convenience. This movement toward a homogenized national cuisine sparked a revival of American regional cooking. In the ensuing decades, the tension between local traditions and culinary science has defined our national cuisine—a battle that continues today.

The idea of America as a place of abundance is enshrined in our culture, from Jefferson's agrarian democracy to the immensity of our supermarkets. The Great Depression, which left a uarter of all Americans out of work and undernourished, tested our belief in this land's unlimited bounty, and in the process changed the way America eats.

In 1933, after four years of deprivation and national debate, President Roosevelt reversed long-standing biases toward government-sponsored "food charity" and assumed responsibility for feeding the hungry. CHampioned by Elanor Roosevelt, "home economists," who had long fought to bring science into the kitchen, rose to national stature. THrough the Bureau of Home Economics, these women led a sweeping campaign to impose their vision of a sturdy, utilitarian cuisine, and instill nutritional recommendations, the forerunners of today's Dietary Guidelines for Americans. About the Author

Jane Ziegelman is the director of the Tenement Museum's culinary center and the founder and director of Kids Cook!, a multiethnic cooking program for children. Depression Dining

You might imagine a culinary history of the Great Depression would be a catalog of cheap and skimpy meals, but having read previous works by Jane Ziegelman and Andrew Coe, I knew I'd be in for a social history with all the trimmings.

I was not disappointed. A Square Meal chronicles American diets in the early 20th century, tells the history of hoboes in America (and the important differences between hoboes and tramps and bums), touches on the popularization of canned and frozen foods, and gets into the surprising politics of feeding (and not feeding) the unemployed during the Depression.

Sprinkled throughout are recipes and photographs and intriguing stories, and what runs just below the surface is that we are not so very far removed from the Thirties. The attitudes toward people using food stamps (which were introduced in that decade) were not charitable -- there was a suspicion in the White House among FDR's cabinet (and perhaps FDR himself) that people accepting handouts would suffer low morale from the experience. Evidently they thought that was a fate worse than actually starving to death, something that happened with grim regularity. But the false economy of letting people starve came back to roost when the Army had to disqualify half of the draftees it examined due to poor health, much of which was directly attributable to poor nutrition.

Fascinating social history, highly recommended!

From breadlines to frozen food

When one pairs the Great Depression and what Americans ate during those years, a reader could infer that this book might be a dull compilation of facts and figures from that time. The more than pleasant surprise is that authors Jane Ziegelman and Andrew Coe have given us a book of sheer delight. Covering those years between the two World Wars, we discover not only what Americans ate but how they did and how many of them managed with the bleakest of monetary assets.

"A Square Meal" gets into the political side of feeding a nation...from the Hoover administration's great reluctance to offer public food relief to the turnabout when Franklin Roosevelt became president. In fact, the book's most charming moments come when the authors describe the Roosevelt's housekeeper, Henrietta Nesbitt, who kept the president (and White House Guests) in great yearning for tastier meals, to put it mildly.

The menus offered in the book are wonderful in their mirrored timeliness. And it ends with the introduction of frozen foods, which opened many eyes to the new possibilities of food consumption. "A Square Meal" is insightful, humorous and educational. I highly recommend it.

An amazing confluence of history, sociology, and culture!

There is an old saying, "You are what you eat." American eating habits reflect our nation throughout its history.

This fascinating study of Americans' diet takes the reader from the 19th-century farm through changes wrought by the move to the cities, World War I, and the beginnings of the disciplines of nutrition science, home economics, technology in the food industry and kitchen, media influences, through the social upheaval that was the Great Depression, ending at that next great turning point, World War II.

The writing is clear and lively and the scholarship impeccably thorough. I can't wait for the authors' next installment.

Philip Weinberg teaches Environmental Law and Constitutional Law at St John's University School of Law in New York. He has written and lectured extensively in the field of environmental law and has chaired several bar association committees and sections dealing with the subject. Prior to teaching, he headed the Environmental Protection Bureau in the New York State Attorney General's Office.

Have a dictionary handy...

I was assigned this book for a Law for Educators class. It's a Master's level class, but it is my first class about law.... needless to say, my knowledge of legal stuff comes from Law and Order and other tv shows (aside from the key cases like Roe Vs. Wade that every education major is taught about). When writing a book about law for non-lawyers, why in the world would the authors not include a glossary?!? I'm having to stop every few paragraphs to look up words, which would be immensely easier with a glossary. Words are bolded in the text as if you should be able to find them in a glossary.... but no glossary exists. Ridiculous.

About the Author

Sheila Tucker

Sheila Buckley Tucker graduated with a B.S. in Food and Nutrition and an M.A. in Healthcare Administration from Framingham State College in Massachusetts. She is board certified in sports nutrition from the American Dietetic Association. As a registered dietitian for over twenty-five years, Sheila has provided clinical nutrition care to patients and clients in a variety of settings, including as an in-patient clinical dietitian specializing in critical care, nutrition support, renal nutrition, cancer care, and medical/surgical care. She has also provided nutrition education as a consultant to corporate wellness programs and area colleges. She has over twenty years of teaching experience at the undergraduate and graduate level in several Boston area colleges and nursing schools. At Boston College, Sheila combines an on-campus clinical nutrition practice, specializing in both sports nutrition and disordered eating, with teaching nutrition in the Connell School of Nursing. She is a contributing author to many nursing textbooks.

Vera Dauffenbach

Vera Dauffenbach, EdD, MSN, RN, has a bachelor’s degree from Macalester College and a master’s degree in nursing from Pace University. Her doctorate in educational leadership is from Western Michigan University.� She has been a faculty member in the baccalaureate nursing programs at Grand View College in Des Moines and Maryville College (now University) in St. Louis.� At present, she is an associate professor and director of the graduate program at Bellin College in Green Bay, Wisconsin.� She has broad classroom and clinical teaching experience on all levels of the undergraduate curriculum, with a special interest in nutrition and pediatrics.� At the graduate level, she teaches courses in nursing theory and leadership.� Her research interests relate to critical thinking and leadership development.� She has contributed extensive NCLEX-style test questions for nursing textbooks.� She is a past board member of the Wisconsin League for Nursing and president of Kappa Pi-at-Large Chapter of Sigma Theta Tau International.

There are so very few books about this most rare and magnificent breed written in English. This is perhaps the only one with practical information regarding the care of the Tibetan Mastiff. As a result, the hope would be that indeed, it is a comprehensive owner's guide. Most fortunately, it is.

Nothing was spared to make this manual the equal of the many fine books available on various dog breeds. It begins with a historical background, covers the care of TM puppies, diseases, breed standards, behavior, etc., and it does it admirably well. Additionally, there are a considerable number of excellent photographs contained within its covers. Overall, this is a fine detailed introduction to the Tibetan Mastiff.

Since there really isn't much in the way in way of books written about Tibetan Mastiffs, if you are interested in purchasing such a title, this one by necessity will the one you will have to buy (as it is the only one still in print at a reasonable price). That said, it is a most excellent book that covers all the bases. Highly recommended to TM owners and those interested in this breed.

A brilliant invitation to explore space from your armchair

Dyson's background as a NASA flight controller and winner of the AIP Science Writing Award and the Golden Kite award guarantees that her science and her writing are accurate as well as clear. But I was still delighted and surprised by both the depth and sparkle of this book. Just picking it up, I was captivated by her use of graphics: ultra clear and engaging. Read from beginning to end, this book is an education in itself.

I'd love to see this book widely adopted for high school and beginning college science courses. It's also first rate as a history of science text. It gives accurate facts and presents them in a way that the most uninitiated can understand and yet the more sophisticated reader can appreciate and profit from. The clarity of the textual material and graphics just pulls the reader into the history of the space program and the recent history of astronomy. Topics include how stars evolve, the exploration of the moon and Mars, the significance of the Hubble telescope, the search for extrasolar planets and extraterrestrial life, the International Space Station, and much much more.

I think it would also make a great gift for a child with an interest in science. Dyson has a genius for explaining complex space discoveries without complex math. Another potential audience is anybody who likes science fiction or wants to learn to write science fiction. Follow the facts in this book and you won't make stupid mistakes about space travel.

Its usefulness would not be limited to children. As an adult, I find this book a source of wonder and fascination with our world in the context of space.

When I was eight, my forward-thinking grandmother bought me the twelve volume The Book of Knowledge. Although the information in that book is now very much outdated, it changed my life. I became interested in the aurora borealis, the planets, the stars, and science in general, an interest that has enriched my life to this day. This single volume will do the same for a child or a curious adult today.

A great history of 20th century Space and Astronomy

When I picked up this book and started to read it I immediately thought: "This would make a great high school textbook for a course about space science". Sometime later I turned the book over and found that was the idea!

A very readable book that hits the highlights of the space and astronomy advances during the last century. Not only is the book very readable it has a extensive list of additional reading materials to provide more depth.

I am a retired aerospace worker and took part in the Apollo and Shuttle programs and the book provided a good review of the many events which occurred. In the day to day activities of the workplace it is easy to lose sight of the big picture and the book provided a good review. The astronomical side was mostly new material to me and was very informative. If you want a good history of this period I highly recommend this book.

Insightful history of space

This book is a very readable, insightful history of the development of astronomy and space through the course of the twentieth century, a century in which our knowledge of the universe changed rapidly, and our ability to explore space moved from the Wright Brothers' hops to the voyages to the moon. Dyson, a former spaceflight controller at the NASA Johnson Space Center, chronicles this development, showing how we got where we are and who did it, in an interesting format, with diagrams and pictures to illustrate the key points. She profiles a "scientist of the decade" for each decade between 1900 and the millennium, and puts everything together into a coherent story of the great adventure of the twentieth century: the human search outward into the universe, and its growing understanding of our home planet and our place in the solar system and in the universe.

loved it ...it had a serious problem....the cover was fine!! but the interior of the book ...the pages were all up=side-down i wanted to show my daughter and grandchildren where I was raised but the (book (or binders) made a big mistake
